Cookies and a Card


Before I post the card I made the other night, I want to share a recipe with you. Our local Stampin’ Up dealer, Jackie,(www.facebook.com/ThePamperedStamper?ref=hl shared this on Facebook and gave me permission to post it here. When she posted the recipe I didn’t have any rhubarb (my plant is pitiful again this year) so I copied it and forwarded it to Joe’s cousin who loves to bake. I knew he had a huge rhubarb plant and sure enough, he made them, loved them and brought me a huge bag of rhubarb the next day. I made them and took some over to our neighbour that fixes our computers and they all loved them and wanted the recipe. So, I thought others may like it too. They are not all that healthy what with all the brown sugar to sweeten up the rhubarb but oh my, are they good. I actually followed the recipe exactly. If you alter it to make it healthier, let us all know how you did it. Here it is.

Rhubarb Cookies

1 cup shortening
1 ½ cups packed brown sugar
2 eggs
3 cups flour
1 tsp baking soda
½ tsp salt 
1½ cups diced rhubarb 
¾ cup shredded coconut

Cream shortening and sugar, beat in eggs.

Combine dry ingredients, add to creamed mixture.

Fold in rhubarb and coconut.

Drop by rounded tablespoonfuls 2" apart on greased cookie sheets (I use parchment paper)

Bake at 350F for about 12 minutes.

Now for the card. This week’s challenge at Stamping Bella was to make a one-layer card. Gulp. I don’t do one layer cards. I like lots of layers but a challenge is a challenge so I went for it. Before I started it I bounced over to the Merry Monday challenge and theirs was to make a Christmas card featuring Santa’s hat somewhere on the card. After flipping through my Stamping Bella stamps I found one that worked for both challenges.

 
I stamped the image right onto the card base and went “whew” when it stamped perfectly. The Christmas balls across the top are from a stamp set from the thrift store so I have no idea who made it. The cats were coloured with Prismacolor pencils and shaded with gamsol. I like to put a layer of colour around the edges and then blend it in with gamsol which leaves the middle lighter. Believe it or not the grey cat was coloured with a black Prismacolor pencil, but a very light layer was put down only around the edges and where I wanted it darker, because I wanted a grey, not black cat and blended it out with gamsol. I added light blue chalk around the cats and thin lines of Pearl stickles at the bottom that look like snow. It’s hard to see it in the photo but it’s there.

I normally post the Stamping Bella challenge on Friday but in case I get busy and forget to post, I thought I’d do as I’m thinking of it.

  1. Aaaawww... i like that card... but ofcourse i'm partial to kitties... :)lol....... Rhubarb... my grandpa had it in his garden...and i remember picking a stalk and chewing on it... not sure i could handle the pucker power today but i did as a kid...... Thats the only way i've ever had rhubarb... i might have to be brave one day and try this recipe! Hugs! deb
